Generates an asset's variable height data
Parameters
- asset: Asset
  The asset to generate modular item data for
- config: VariableHeightConfig
  The variable height configuration
- parentOption: ExtendedItemOption = null
  The parent extended item option of the super screens (if any)
Returns VariableHeightData
- The generated variable height data for the asset
